Овощи, снятые в период дождей, подвержены гниению, а кроме того, содержат меньше минеральных и биологически активных веществ. Правило второе: массовый сбор овощей лучше проводить рано утром. Листовые овощи надо собирать поздно вечером (в любом случае только не до обеда).
Ученые установили, что во второй половине дня они содержат нитратов на 30-40 процентов меньше, чем в утренние часы. Вообще-то у всех овощей количество нитратов изменяется в течение суток. Их максимум приходится на 12-15 часов, минимум — на вечерние часы. Чем больше солнца, чем суше и теплее погода, тем важнее выполнять эту рекомендацию.
Правило третье: снимайте плоды в стадии технической спелости, не доводите их на кустах до полной готовности (то есть до биологической спелости). Это значительно стимулирует плодоношение многосборовых культур.
Раннюю капусту не срезают всю подряд, а выбирают наиболее созревшие кочанчики. Обязательно оставляйте два-три покровных листа. Если не успеваете съедать всю раннюю капусту своевременно, а она поспела, надорвите немного ее корни, потянув за головку — пусть постоит еще несколько дней. Главное, не допустить, чтобы она растрескалась.
Цветную капусту срезают, когда соцветие приобретает товарный вид. Ее на грядке тоже долго не удержишь — начнет рассыпаться. Чтобы она не желтела на ярком солнышке, скрепляют над соцветием два-три листа — пусть предохраняют от избытка света.
Брокколи не предполагает одноразовой уборки, из пазух продолжают появляться новые соцветия.
Кольраби готова к употреблению, когда стеблеплод имеет в диаметре 5-8 см. Задерживаться нельзя, иначе мякоть загрубеет, станет деревянистой и непригодной д ля еды.
Петрушку, укроп, листовой сельдерей срезают на зелень своевременно и сушат, солят, замораживают.
Пошли огурчики. Их следует собирать через день-два, не оставляя корявых и переспелых плодов — иначе растение будет продолжать работать на них и не даст новых завязей. Стебли сильно не ворошат, чтобы не оборвались дополнительные корни.
Не мешает в этот период подкормить огурцы, но только не азотным удобрением. Они в этот период более нуждаются в калии, поэтому лучше подсыпать золы. Отплодоносят — ботву уберем, чтобы не размножать вредителей и болезни. Сорта и гибриды огурцов теперь появились такие, которые не желтеют при перерастании. Тем не менее не стоит доращивать огурцы до их максимального размера и огрубения кожицы.
Чтобы иметь кабачки, надо регулярно обрывать с них плоды, убирать перезревшие и больные. Как и у огурцов, это способствует появлению новых завязей.
Цуккини и кабачки, предназначенные для зимнего хранения, доращивают на грядке и снимают только тогда, когда огрубеет кожица. Плоды, которые сразу идут в пищу или используются для консервирования, снимают, когда они вырастают на четверть или треть своей величины. Для переработки могут быть побольше — половина или две трети своего максимального размера.
Патиссоны собирают два раза в неделю в возрасте 2-7 дней. Их диаметр должен быть 4-5 см. Опоздаешь — они потеряют нежность. Патиссоны некоторые хозяйки консервируют целыми. В этом случае они должны быть малюсенькими. А в остальном с ними поступают так же, как с кабачками.

Удаление производится после того, как остающиеся плоды достигают размера теннисного мячика или чуть побольше. На кустах мелкоплодных сортов оставляют по десять и более завязей. И все плоды снимают осенью, насколько можно позже — лишь бы не подморозились. Плодоножка спелой тыквы легко отделяется от стебля. В этом случае плоды хорошо хранятся всю зиму.
Арбузы срывают с плодоножкой. Определяют их спелость разными способами — по стуку, по хрусту, по пятнышку у макушки. А уж если начала плодоножка усыхать, тогда арбуз определенно созрел . С дыней таких проблем нет. Видно по цвету, готова она к употреблению или нет. И плодоножка начинает отсыхать, и специфический аромат ощущается.
Помидоры допускается собирать в фазе побурения и молочной спелости, но все же плоды, которые краснеют на кустах, имеют лучшие вкусовые качества. При дозаривании остаются запах, цвет, форма, а вот вкус уже не тот.
Перец собирают как в технической, так и в биологической спелости — кому что нравится. Одни кушают его и заготавливают нежным, зелененьким, другие ждут, пока плоды приобретут окраску, станут красными, желтыми, светлыми. Острый перец в биологической спелости сохраняется плохо, лучше всего из него сразу сделать гирлянду и повесить на просушку.
Баклажаны рекомендуется собирать раз в 5-7 дней. Тут уже бывает нужен нож или секатор — плодоножки жесткие, и некоторые сорта имеют колючки. Хорошо они себя чувствуют, если обсажены вокруг кориандром. Эта пахучая трава защищает их от нападения колорадских жуков.

На лопатку (зеленые бобы) спаржевую фасоль снимают многократно. Она быстро теряет качество, долго храниться не может. Собрали — приготовьте сразу и скушайте. Или заморозьте, или законсервируйте. Зерно фасоли, предназначенное для хранения, держат в бобах на кустах до высыхания створок.
Лук убирают обязательно в сухую погоду при полегании, пожелтении листьев и образовании сухих чешуй. Торопить лук, топтать и придавливать нельзя — внесется лишняя инфекция. К примеру, бактериоз. Лук сразу не обрезают. Пусть листья хорошо высохнут, тогда осуществится отток пластических веществ в головку. Лук раскладывают по ящикам, предварительно хорошо-хорошо просушив.
Чеснок лучше выдергать раньше, чем опоздать, а то головки начнут рассыпаться на отдельные зубки и хуже будут храниться.
Корнеплоды убирают по мере их созревания. Если полностью вызревшие корнеплоды оставить на грядке, они растрескаются, их могут повредить слизни или почвенные вредители, при дождливой погоде может начаться загнивание. Чтобы убирать их осенью, надо весной сдвинуть сроки посева.
