В свежих зубчиках овощной культуры содержится очень много углеводов, растительные белки, аскорбиновая кислота и другие витамины, полезные для человека минеральные соли, эфирные масла, а также высокоэффективные фитонциды, уничтожающие большинство известных патогенных микроорганизмов. Зеленая ботва чеснока богата каротиноидами. В настоящее время данное растение широко используется для производства натуральных целебных препаратов, которые назначают в составе комплексной терапии при атеросклерозе, нарушениях иммунного статуса, раннем старении. Порошок из сухого чеснока нормализует деятельность желудочно-кишечного тракта и помогает справиться с дисбактериозом.
Данное растение является многолетником, принадлежащим к семейству луковых, но культивируется на огородах как однолетник. Листья у чеснока плоские, молодая ботва очень нежная, пряная. Луковица сложная, состоит из нескольких зубчиков, каждый из которых отграничен от остальных кожистой оболочкой. Стрелкующиеся сорта обычно образуют не более 12 зубцов, у нестрелкующихся подземная часть побега может состоять из 25—30 «деталей». Корневая система короткая, мочковатого типа. Соцветие после засыхания образует мелкие дочерние луковички. Все части побега чеснока издают специфический острый запах — данная особенность обусловлена повышенным содержанием эфирных масел в соке и тканях растения. Урожайность данной культуры, в зависимости от сорта, составляет до 1,5 кг с 1 м2 полезной площади.
Чеснок обладает повышенной устойчивостью к внезапным заморозкам, некоторые разновидности неплохо переносят даже сильный мороз. Тем не менее оптимальной температурой для выращивания данного растения является 10—15° С выше нуля, а полноценное созревание луковиц возможно только при 20—25° С тепла. Овощ относится к светолюбивым культурам, поэтому его следует высаживать на открытых участках.
Стрелкующиеся сорта чеснока дают луковицы с радиально расположенными зубчиками, образующими один сплошной ряд вокруг плотной стрелки. У нестрелкующихся разновидностей зубчики размещены под внешней оболочкой подземного образования в виде спирали, состоящей из 3—5 витков, причем в центре располагаются очень мелкие «детали». Озимые сорта при весенней высадке не образуют стрелку. К концу лета у них формируются массивные луковицы, не разделенные на зубчики и по внешним очертаниями напоминающие яблоко. Яровой (летний) чеснок в тех же условиях дает обыкновенные луковицы с несколькими зубчиками.
Озимые сорта отличаются обильной ранней урожайностью, но при этом очень плохо хранятся, поэтому такой чеснок используют для приготовления первых и вторых блюд, а также для консервирования овощей на зиму.
Период вегетации подобных разновидностей составляет от 3 до 4 месяцев. Особой популярностью пользуются сорта Богуславский, Комсомолец, Полет, Юбилейный грибовский.
Богуславский — холодоустойчивая разновидность чеснока со слегка уплощенной сферической луковицей массой до 45 г, количество зубчиков не превышает 6. Внешняя оболочка серовато-лиловая.
Комсомолец — сорт, обладающий устойчивостью к заморозкам. Луковица плотная, крупная, количество зубчиков от 6 до 13. Шелуха окрашена в розоватый оттенок.
Полет — высокоурожайный сорт, неприхотливый к температуре воздуха и почвы. Луковица некрупная, содержит до 8 зубчиков.
Юбилейный грибовский — очень острый сорт с большими луковицами, слегка уплощенными или сферическими, имеется 10—12 зубчиков. Внешняя чешуя матовая, лилового оттенка.
Яровые сорта выращиваются преимущественно для зимнего хранения, поскольку при соблюдении правил ухода они не подвержены гниению. Чаще всего на огородах культивируют Гафурийский и Украинский белый.
Гафурийский — среднеспелый пряный сорт с очень крупными луковицами. Количество зубчиков достигает 18—19. Период вегетации обычно составляет около 3 месяцев.
Украинский белый — урожайный сорт с большими уплощенными луковицами, содержащими более 20 зубчиков. Рекомендуется для длительного хранения, высушивания и консервирования.
В отличие от большинства огородных культур чеснок не размножается семенами. Посадочным материалом являются отдельные зубчики или воздушные мелкие луковицы, образующиеся в соцветиях на верхушках стрелок. В настоящее время на приусадебных участках средней полосы России успешно культивируется около 30 видов полезного и вкусного овоща.
Для того чтобы добиться максимальной урожайности чеснока, необходимо правильно подготовить почву для высадки зубчиков. Субстрат должен содержать много органических соединений. Идеальным вариантом является суглинок с нейтральной или слабощелочной реакцией. В качестве растений-предшественников целесообразно культивировать ранние сорта капусты, огурцы, бобы, фасоль, кабачки, патиссоны, горох.
Осенью следует перекопать землю на глубину около 25 см и внести перепревший навоз или компост, а также комплексную минеральную подкормку. Чтобы сэкономить время и силы, можно сразу же приготовить гряды под озимый и летний (яровой) сорта чеснока. Расстояние между рядами посадок должно быть не меньше 20 см.
Озимые разновидности полезного овоща высаживают в субстрат в начале октября, приблизительно за месяц до первых заморозков. Длительный период адаптации позволяет будущим растениям в достаточной степени акклиматизироваться и успешно пережить зимние холода. Грядки с чесноком можно укрыть опилками или мульчей.
Летние (яровые) сорта чеснока сажают после полного оттаивания верхнего слоя грунта — в конце апреля.
Для того чтобы луковицы получились крупными, необходимо заранее перебрать подготовленный посадочный материал и выбрать только хорошо развитые зубчики. Примерно за 24 часа до предполагаемой высадки в субстрат следует замочить чеснок в воде или растворе специального комплексного удобрения (его можно приобрести в садоводческом магазине). Озимые сорта погружают в почву на 4 см, оставляя расстояние между будущими растениями около 10 см. Для яровых разновидностей овоща промежутки и глубину заделки уменьшают на 2—3 см. Верхний слой почвы следует тщательно разбороновать.
В течение сезона вегетации летние сорта чеснока подкармливают через 2 недели после высадки в грунт, а затем в период активного развития подземной части побега. Обычно в качестве удобрения используют суперфосфат, хлористый калий и аммиачную селитру. Кроме того, очень удобно применять комплексные смеси в виде концентрированных жидкостей, которые следует развести в воде строго по инструкции. Желательно в течение первых двух месяцев вегетации чеснока проводить обильный полив, следя за тем, чтобы почва на грядах всегда оставалась увлажненной. На 1 м2 посадок рекомендуется выливать до 2 ведер воды. Остальные особенности ухода за данной овощной культурой такие же, как и для обыкновенного репчатого лука.
Уборку озимого чеснока можно начинать после того, как нижние листья вегетативных побегов станут желтыми и слегка подсохнут. Удобнее всего выкапывать созревшие луковицы вилами, стараясь не повредить зубчики. Корни извлеченных экземпляров сразу же срезают острым инструментом, оставляя хвостики около 1 см длиной, ботву оставляют. Собранные растения выкладывают для просушивания на открытом воздухе под навесом или в хорошо проветриваемом помещении. Хранить чеснок можно в виде кос, а также в сетках, подвешенных к стропилам сарая или погреба. При соблюдении всех рекомендуемых правил ухода урожайность данной культуры может достигать 1 кг с 1 м2 площади посадок.
Яровые сорта убирают после того, как ложная стрелка, растущая из центра луковицы, размягчается и поникает, а пожелтевшая листовая розетка распластывается по поверхности грунта. Не следует откладывать выкапывание чеснока, поскольку внешние чешуи луковиц под воздействием почвенной влаги постепенно разрушаются, обнажая зубчики, и проросшие экземпляры становятся непригодными для хранения.
Молодую ботву чеснока употребляют в пищу как полезную пикантную приправу. Зубчики можно есть свежими, а также использовать для приготовления салатов, соусов, консервирования овощей, зелени и грибов на зиму.
