Выращивание перца
Огородное растение с очень вкусными и полезными плодами было завезено в Европу в XVII столетии. Существует множество различных разновидностей перца со сладкой и очень острой мякотью.

В спелых плодах перца содержится очень много аскорбиновой кислоты, белки, легкоусвояемые сахара, углеводы, минеральные соединения, каротин, витамины группы В, РР, специфические эфирные масла. В горьком перце, кроме того, обнаружен алкалоид капсаицин, который придает мякоти специфический едкий вкус. Настойки на горьком перце применяют в качестве терапевтического средства для улучшения пищеварения, а также наружно при ревматизме, радикулите и простуде. Порошок из высушенных плодов используют при изготовлении перцового пластыря.

Согласно применяемой в наши дни ботанической классификации перец является травянистым однолетником из семейства пасленовых. Стебель может достигать 90—95 см в высоту, у основания волокна одревесневают. Листовые пластинки имеют овально-ланцетную форму. Цветки золотистые или лиловые, плод представляет собой стручок, форма которого является сортовым признаком растения.

Длина перца колеблется в пределах от 1—2 до 20 см, масса — от 1 до 200 г. Окраска спелых плодов варьируется от бледно-зеленой до золотистой, красновато-оранжевой или темно-красной.

Перец относится к теплолюбивым овощным культурам. Прорастание семян и полноценное развитие растений возможно при температуре не ниже 20° С. Заморозки и похолодания приводят к нарушениям формирования корневой системы, замедлению роста и снижению урожайности. Овощ нуждается в хорошем освещении, но при длительном пребывании под прямыми лучами солнца может заболеть и погибнуть.

в обязательной пикировке. Посев производят в первой декаде марта, для того чтобы в конце мая высадить подросшие сеянцы в открытый грунт. На 1 м2 площади огорода должно находиться не более 11—13 растений; загущенные посадки плохо развиваются.
Для перца необходима хорошо дренированная почва с легкой механической структуры. Чтобы повысить содержание питательных веществ в субстрате, следует заблаговременно внести в него органические и минеральные удобрения. В качестве растений-предшественников рекомендуется использовать горох, тыкву, кабачки, патиссоны, белокочанную капусту. Нежелательно культивировать на соседних грядках огурцы. Гряды готовят поздней осенью, тщательно перекапывая почву и одновременно добавляя в нее питательные смеси. Весной можно использовать азотные подкормки.

Подрастающий перец необходимо периодически удобрять минеральными смесями. Удобнее всего использовать для этой цели концентрированные составы, которые следует растворять в воде. Полив должен быть регулярным, не реже 1 раза в 10 дней. За 15—20 дней до предполагаемого сбора созревших плодов доступ влаги в почву следует прекратить. Стебли данной культуры обладают повышенной прочностью, поэтому даже высокорослые сорта не нуждаются в подвязывании к опорам.

Сбор урожая производят постепенно, удаляя с кустов полностью созревшие плоды. Желательно завершить уборку до наступления первых заморозков, иначе перец будет плохо храниться.
