Размножают эстрагон семенами, делением куста, зелеными черенками. Семена тугорослые, их не заделывают в почву, а слегка прижимают к ней. Посевы накрывают пленкой или стеклом. Всходы появляются через 2-3 недели, их прореживают, оставляя между растениями расстояние 10-15 см.
Первую зелень срезают, когда они достигнут в высоту 10-15 см. Подкармливают минеральными удобрениями (органические снижают аромат эстрагона).
Молодые побеги добавляют к овощным и мясным блюдам, в салаты, гарниры, соусы, соленья. Эстрагоном ароматизируют сыр, простоквашу, масло, уксус, горчицу. Используют его и при засолке огурцов, томатов, грибов.
