В полном объеме головки артишока могут вырастать до размеров крупного апельсина. Когда головки достигают половины своей величины, стебли под ними прокалывают деревянными шпильками (можно использовать зубочистки). Эта операция приводит к формированию более крупных корзинок (головок).

В первый год на одном растении оставляют не больше трех цветоносных стеблей, а на каждом стебле — 3-4 головки, что позволяет получить артишоки хорошего качества. На второй-третий год их число возрастает до 10-12 штук.

Корзинки, когда они полностью развиты, но еще закрыты, срезают вместе с частью стебля (3-4 см). Убранные в таком состоянии, в прохладном месте они сохраняются до 4 недель.
