Из овощных культур выгоночную зелень дают лук репчатый, лук-порей, лук батун, петрушка, салатный цикорий, сельдерей, спаржа, ревень, щавель. Из ягодных культур 1,1 я выгонки сегодня чаще всего используют землянику и виноград, хотя 100-200 лет назад знали, как провести выгонку крыжовника, малины, смородины. В литературе XIX века ложно встретить упоминание о выгонке абрикоса, вишни, персика, сливы, черешни.
