Сохранность в большой степени зависит и от правильно выбранного срока уборки: это делают на стадии пожелтения и увядания отдельных нижних листьев. К этому времени наружные чешуи плотно облегают луковицу, но не подсыхают, а зубки под ними ярко выражены. Убирать чеснок лучше в сухую погоду.
Луковицы предварительно подкапывают, а затем выдергивают и складывают рядами так, чтобы каждый ряд был укрыт листьями последующего ряда, влага с покровных чешуй постепенно испаряется, и они не лопаются.
Затем стебли с головками просушивают (как правило, в течение месяца) на чердаке или в другом проветриваемом помещении до полного высыхания листьев и ложных стеблей После завершения сушки луковиц чеснока корешки и .ложные стебли обрезают секатором, оставляя пенек в 2-3 см.
