Первые экземпляры данной бахчевой культуры были акклиматизированы в Поволжье. Раньше арбуз считался изысканным лакомством, из сочной мякоти изготавливали патоку и кондитерские изделия. В XVII веке полезное растение было распространено по всей России.

В спелых плодах арбуза содержится много природных сахаров, особенно фруктозы, а также витамины группы В, аскорбиновая кислота, органические кислоты, легкоусвояемые минеральные соли, пектины. Арбузный сок используют в качестве дополнительного терапевтического средства при подагре, камнях в почках и мочевом пузыре, анемии, атеросклерозе, заболеваниях желудочно-кишечного тракта.

С ботанической точки зрения арбуз является травянистым однолетником, относящимся к семейству тыквенных. Длина стебля взрослого растения может достигать 5 м, у кустовых форм около 1,5 м и меньше. Листья очень крупные, с дваждыперистыми листовыми пластинками, сильнорассеченные. Цветки серовато-желтые. Плод представляет собой ягодообразную тыквину (иногда в литературе по садоводству и овощеводству его называют ягодой). Форма и окраска арбуза зависит от его сортовой принадлежности. Существуют пестрые и полосатые разновидности со сферическими, удлиненными, дынеобразными и даже почти прямоугольными плодами.

В средней полосе России культивируют преимущественно раннеспелые сорта, выведенные путем длительной селекции.

Зенит — популярная раннеспелая разновидность арбуза с очень вкусными и сочными плодами. Период вегетации составляет около 3 месяцев. Ягоды шаровидные, массой до 5,5—6 кг. Толщина коры не превышает 10 мм. Мякоть темно-красная, упругая, слегка зернистая. Семена овальной формы, коричневатые с угольно-черными крапинками. Срок хранения спелых плодов составляет около 1 месяца.

Ильинский — раннеспелый сорт, отличающийся очень высокой урожайностью. Мякоть нежная, приятная на вкус, семена темно-коричневые или черные.

Ницца — распространенный раннеспелый сорт арбуза с периодом вегетации не более 3 месяцев. Плод овальной формы, массой до 5—6 кг. Мякоть пурпурно-красная, зернистая, очень нежная и сочная. Семена темно-коричневые, с черными пятнышками и шероховатой поверхностью. Своевременно собранные спелые арбузы хранятся около 1 месяца.

Паннония — популярный гибрид с очень вкусными плодами. Период вегетации составляет 2,5—3 месяца. Плод достигает массы 5 кг, кора плотная, толстая, темно-зеленого оттенка, мякоть интенсивно-красная, сладкая и нежная. Семена мелкие.

Сахарный малыш — один из самых распространенных в Европе скороспелых сортов арбуза. Период вегетации не превышает 3,5 месяца. Плоды круглые, средней величины, массой около 4 кг. Кора темно-зеленая с почти черными полосами. Мякоть красная, очень сочная, семян мало.

Хелен — гибридный раннеспелый сорт, обладающий устойчивостью к большинству вирусных и бактериальных заболеваний, легко переносящий понижение температуры воздуха. Период вегетации не превышает 2 месяцев. Плоды овальные, массой до 12 кг. Кора гладкая, светло-зеленая с темными широкими полосками. Мякоть темно-красная, нежная, семена коричневатые. Срок хранения составляет около 1,5 месяца.

Червонный король — уникальный бессемянный сорт арбуза, представляющий собой триплоидный гибрид, выведенный селекционными методами. Период вегетации продолжается около 4 месяцев. Плоды удлиненные, плотные, массой до 9 кг. Кора тонкая, мякоть огненно-красная, сочная, с приятным вкусом и ароматом.

Арбуз лучше всего растет на почвах с легкой механической структурой, например песчаных. Для посадки следует отобрать самые крупные и хорошо развитые семена. Перед помещением в субстрат их необходимо замочить в бледно-розовом растворе перманганата калия примерно на сутки, затем завернуть во влажную марлю и положить в теплое затемненное место. После наклевывания ростков можно приступать к посадке.

Гряды желательно подготовить осенью — глубоко разрыхлить почву и внести в нее минеральные удобрения. Можно также использовать в качестве подкормки перепревший навоз или листовой перегной. Весной субстрат еще раз перекапывают и боронуют. Лунки располагают на расстоянии около 1 м друг от друга. Для ускорения роста и развития молодых растений можно использовать переносные парнички.

Полив до начала цветения и образования завязей должен быть регулярным, но не слишком обильным. После появления будущих плодов объем поступающей в почву воды следует увеличить.

Сорта с длинными плетями рекомендуется слегка присыпать землей или фиксировать на поверхности почвы специальными пластмассовыми шпильками.

Для улучшения формы зрелых плодов их необходимо аккуратно поворачивать на поверхности субстрата таким образом, чтобы плодоножка всегда была направлена вверх.

После того как будущие арбузы достигнут около 6 см в диаметре, верхушки стеблей осторожно прищипывают, а плохо развитые боковые побеги убирают.

Признаком достижения спелости является выраженный блеск внешней коры, бледно-желтое пятно сбоку, а также подсохшая плодоножка в виде хвостика. При постукивании по зрелому арбузу слышен чистый звонкий звук. Сбор урожая проводят по мере созревания плодов.
