Род Хурма включает в себя около 290 видов, однако в качестве плодовой культуры распространение получили всего три: хурма восточная (она же японская хурма), хурма виргинская и хурма кавказская. Самая зимостойкая из них—хурма виргинская, именно ее сорта удается выращивать за пределами субтропической зоны.

В Украине хурма промышленной плодовой культурой так и не стала, но в любительских хозяйствах выращивается во многих областях, в том числе в Киевской, Полтавской и Ровненской.

Возможно, это произошло потому, что поначалу основное внимание было уделено культивированию менее зимостойкой хурмы восточной, а более приспособленная к умеренному климату хурма виргинская была завезена позже. В настоящее время появилось немало сортов, являющихся гибридами между этими двумя видами.

Биологические особенности

Дерево в среднем 6—8 (до 15) м вы-сотой с шаровидной или раскидистой кроной и разветвленной корневой системой (корни очень прочные). Молодые побеги опушенные. Листья эллиптические, сверху темно-зеленые и глянцевые, снизу — более светлые из- за опушения. Большинство сортов двудомно.

Цветет в апреле—мае. Цветки трех типов — мужские, женские и обоеполые (последние встречаются редко). Плод — крупная ягода до 300 г, форма может быть различной, окраска — от светло-желтой до темно-коричневой. Семена крупные, плоские. Есть бессемянные сорта.

Отличается длительным сроком вегетации — с февраля по ноябрь, что затрудняет выращивание данного вида за пределами субтропиков. Очень теплолюбивый вид.

Похожа на предыдущий вид, но деревья, как правило, несколько меньше, корневая система менее разветвленная (зато стержневые корни очень быстро растут), плоды меньше по размеру и уступают плодам хурмы восточной по вкусу (у большинства сортов они более терпкие, а у исходной формы почти несъедобны), зато созревают раньше (одновременно с поздними сортами груш).

Самый зимостойкий вид хурмы — выдерживает зимние морозы до -30…-35 °С, более устойчивый и к засухе, и к переувлажнению, нетребовательный к почвам (может расти на полузаболоченных, слишком кислых, бедных каменистых и т.п.).

Ценность культуры
Плоды хурмы используются в пищу в свежем и суше-ном виде, из них также можно готовить варенье, джемы и сиропы.

Плоды хурмы содержат до 20 % сахаров, в основном глюкозы и фруктозы, до 55 мг% витамина С, каротин (провитамин А) и много дубильных (вяжущих) веществ, благодаря чему плоды большинства сортов в недозрелом виде (у хурмы виргинской нередко и в зрелом) имеют сильно вяжущий вкус и несъедобны, но при полном созревании вяжущий вкус плодов становится менее заметен.

Хурма обладает тонизирующими свойствами, успокаивает нервную систему, повышает работоспособность, обладает мочегонным и бактерицидным (в отношении кишечной и сенной палочек и стафилококка) действием. Хурма полезна при расстройстве пищеварения и заболеваниях сердечно-сосудистой системы. В народной медицине она также используется при многих желудочных заболеваниях.

Сорта
Наиболее перспективны отечественные сорта (гибриды хурмы восточной и хурмы виргинской).

Гора Говерла. Гибридный сорт, выведен в Никитском ботаническом саду. Плоды крупные (до 270 г). Зимостойкость средняя.

Россиянка. Сорт выведен в Никитском ботаническом саду и на сегодня является основным для выведения новых, более морозоустойчивых сортов. Средняя масса плода 50—76 г, зимостойкость до -27 °С.

Никитская бордовая. Гибридный сорт, выведен в Никитском ботаническом саду. Плоды массой до 150 г, очень хорошего вкуса (на уровне лучших сортов хурмы восточной); зимостойкость до -25 °С.

Выбор места
Главные требования для хурмы: почва не должна быть засоленной, участок должен быть защищен от ветров и обеспечен влагой (или всем необходимым для искусственных поливов). Можно разместить хурму возле стены дома.

Размножение
Обычно саженцы хурмы приобретают уже готовыми к посадке. Сажать их после покупки надо как можно быстрее, размещая прививкой на юг. Корневую шейку саженца надо заглублять в землю на 7—10 см (тяжелые почвы) или 10—15 см (легкие почвы). Землю вокруг саженца утаптывать нельзя, после проседания нужно подсыпать грунт сверху и хорошо полить.

Почва на постоянном месте подготавливается так же, как для любых других плодовых культур.

Схема посадки и глубина посадочной ямы
Для высокорослых сортов 7×7 м, для низкорослых 5 х 3 (в условиях загущенной посадки возможно даже 3×3 м). На 8 женских деревьев достаточно иметь 1 мужское.

Глубина посадочной ямы зависит от раз-мера корней — она должна быть на 20 см больше, чем их диаметр.

Обрезка, формирование кроны
Однолетние саженцы обрезают на высоте 80—90 см от корневой шейки, из появившихся после этого боковых побегов оставляют в качестве скелетных ветвей 4—5 штук, причем нижняя должна находиться на вы-соте 50—60 см от корневой шейки (исходная высота штамба). На следующий год будущие скелетные ветви укорачивают до 35—40 см длиной.

В этом году уже может начаться плодоношение, после его начала сильно обрезать хурму нельзя, а сама обрезка должна быть направлена на то, чтобы образовывалось достаточное количество однолетних новых побегов (хурма плодоносит на них):

Санитарная обрезка должна проводиться ежегодно. Омолаживающая обрезка начинается после явного снижения роста побегов (важная особенность — в год, когда ее проводят, деревья обычно не плодоносят).

Поливы
Молодые насаждения надо поливать в среднем 2 раза в месяц, взрослые — 1 раз и реже (в зависимости от количества атмосферных осадков).

Подкормки
Подкормки на плодородных почвах требуются 8-летним растениям, на бедных — 5—6-летним. Весной вносится полное удобрение (азот, фосфор, калий в соотношении 2—2,2:2:1).

Прочий уход
Уход включает в себя весеннюю и осеннюю вспашку (перекапывание) и 4—5 рыхлений за сезон. На зиму штамбы желательно укутывать утепляющим материалом. Стволы молодых деревьев и основания скелетных ветвей желательно ежегодно белить. При обильном плодоношении под ветви подставляются подпорки.

Вредители и болезни
Вредители: хрущ (личинки). Болезни: повреждается крайне редко.
