Рецепты из сои
Соевое молоко. 1 кг сухого зерна сои замачивают в слегка подсоленной воде комнатной температуры на 16-18 часов. Затем воду слить, набухшее зерно промыть, пропустить через мясорубку с мелкими отверстиями решетки.

В измельченную массу налить 4 л слегка подсоленной воды комнатной температуры и оставить на 40-50 минут, несколько раз перемешать деревянной лопаточкой. Процедить и отжать через полотняный мешочек. Отжатую массу еще раз пропускают через мясорубку или измельчают в глиняной посуде деревянным пестиком.

Во вторично измельченную массу вновь наливают 4 л слегка подсоленной воды, дают постоять 40-50 минут, перемешивая несколько раз, вновь отжимают, сливают обе жидкости в одну посуду и кипятят. Следят, чтобы молоко не «убежало». После кипячения на соевом молоке образуется довольно вкусная пенка. Чтобы избежать горохового привкуса, можно добавить кофе, какао или немного соды.

Простокваша, кефир, ряженка. Поставленное в теплое место соевое молоко через 12-18 часов закисает, образуя простоквашу, которая по внешнему виду, консистенции и вкусу почти не отличается от простокваши из коровьего молока. Соевое молоко, заправленное кефиром, образует кефир, а заправленное сметаной (2 ложки сметаны на 1 л молока) — ряженку.

Соевая мука. Получают ее очень просто: сухие зерна размалывают в кофемолке или с помощью небольшой домашней мельницы (у кого она есть). Из мясорубки выйдет не мука, а крупа.

Хлеб. 1 стакан соевой муки, 1 стакан пшеничной муки, полстакана молока, 2 яйца, дрожжи, соль. Печь обычно. Хлеб чудесный по вкусу и по запаху.

Кашка. 1 стакан соевой муки, 3 стакана воды, соль. Варить в закрытой посуде 2 часа. После остывания кашку нарезать кусочками, обкатать в муке и поджарить на масле.

Омлет. 3 столовые ложки соевой кашки до обжаривания, 2 столовые ложки молока, 2 яйца, 2 столовые ложки вареного риса, соль. Жарить на масле.

Оладьи. 2 столовые ложки соевой муки, 2 столовые ложки пшеничной муки, 1 яйцо, дрожжи, соль. Все смешать с молоком и жарить на горячей сковородке.

Котлеты. Сою замачивают на ночь, потом дробят в сыром виде на скоростной электрической мясорубке почти в пену. Можно, конечно, и на простой, но так сильно размолотить не удастся. На 1 кг фарша кладут одно яйцо. Булку и подваренный картофель, как в мясные котлеты, сюда не добавляют. Остальное — по вкусу.

Отварные соевые бобы. Зерно сои положить в кастрюлю, залить кипящей водой, чтобы вода покрывала их на 4-6 см выше, закрыть крышкой и поставить варить на небольшом огне до полной мягкости бобов. Когда бобы будут почти готовы, положить соль и жир (можно добавить черного молотого перца по вкусу).

Готовые бобы заправить сметаной и прогреть, не давая кипеть. После этого их можно подавать к столу. Для быстрой варки соевых бобов зерна сначала замачивают в подсоленной воде на 16-18 часов, затем варят с добавлением соды. Лучше всего для этой цели использовать кастрюлю-скороварку.

Сваренная соя является прекрасным полуфабрикатом, который используют для приготовления самых разных высококалорийных блюд. Отвар сои обладает хорошим косметическим свойством — отлично питает и смягчает кожу рук и лица.

Фарш из соевых бобов. Бобы отварить, откинуть на дуршлаг и, не давая остыть, пропустить через мясорубку. Так как соя содержит меньше влаги, чем мясо, в фарш следует добавить молока или воды, в которой варились овощи. В блюда из соевого фарша следует класть различные приправы (пряности, специи).

Тефтели. Приготовить фарш, как сказано выше, сделать из него тефтели величиной с куриное яйцо, обвалять в панировочных сухарях, обжарить на сковородке в жире (или

отварить в дуршлаге на пару), выложить в сотейник, залить сметаной, дать вскипеть и подавать к столу. Можно положить сметану в фарш, а тефтели подавать с томатным соусом.

Рулет. Приготовить фарш, как сказано выше. Мелко нашинковать лук, стебли сельдерея и сладкий перец. Овощную смесь пассировать до мягкости в каком-либо жире. Добавить томат-пюре, перемешать и довести до кипения.

Дать немного остыть, положить размельченный и смоченный молоком или водой мякиш черствого белого хлеба, соевый фарш, взбитые яйца, соль, мелко нашинкованную зелень петрушки и укропа. Ингредиенты тщательно вымешать, выложить на подмасленную сковороду, придав форму длинного хлеба, посыпать толчеными сухарями и запечь в нежаркой духовке.

Подавать с каким-либо соусом. Дозировка: соевые бобы (зерно) — 500 г; жир — 75 г; молоко — 50 г; томат-пюре — 250 г; хлеб (мякиш) — 100 г; яйца — 3 штуки; соль — 25 г; луковицы — 2 штуки; перец сладкий — 1 стручок; зелень петрушки, сельдерея, укропа — по 2 столовые ложки; сметана для соуса — 250 г.

Соевые бисквиты. 1 стакан соевой муки, 1 стакан пшеничной муки, 0,75 стакана воды, соль. Печь 15 минут.

Кофе. Сухие зерна обжарить до коричневого оттенка на сильно раскаленной сковородке. Размолоть, залить кипятком, не кипятить. Пить через 20-25 минут. Рекомендовать его употребление можно диабетикам и людям со слабым сердцем.

Также он усиливает работу кишечника, устраняет запоры. Он в два раза питательнее, чем обычный кофе, и особенно вкусен бывает с молоком или сливками. Используя сою в домашних условиях, можно приготовить множество самых разных блюд.
