Выращивание цветной капусты
Широко распространенный вкусный и питательный овощ. В мякоти и соцветиях данной разновидности капусты содержится растительный белок, сахаристые вещества, различные витамины, минеральные соединения. Цветную капусту используют для приготовления диетического и детского питания, а также в качестве гарниров и самостоятельных блюд общего стола.

В отличие от других разновидностей капусты данный овощ не образует кочанов. В пищу используется так называемая головка, образуемая компактно скрученными ветвистыми побегами-цветоносами. Если не срезать соцветия своевременно, побеги будут продолжать рост, а цветки через некоторое время образуют завязи и семена. Урожайность цветной капусты, в зависимости от сортовой принадлежности, может составить до 4 кг с 1 м2.

Все разновидности данного овоща являются скороспелыми при условии достаточной продолжительности светового дня. Капуста обладает устойчивостью к заморозкам, но плохо переносит засуху и жару. При повышенной температуре воздуха головки становятся жесткими и разрыхленными, их вкусовые качества заметно снижаются.

Раннеспелые сорта цветной капусты созревают в течение 3—3,5 месяца. В средней полосе России самыми популярными являются Фрюэрните, Мовир 74 и Ранняя грибовская.

Семена цветной капусты на рассаду высевают в середине марта. Следует помнить о том, что данная культура очень плохо переносит смену условий произрастания, поэтому молодые растения необходимо пикировать в подготовленные торфяные горшочки. Глубина заделки семян не должна превышать 5 мм, после высадки лунки присыпают чистым речным песком. После появления над поверхностью субстрата первых всходов следует подождать 10—12 дней и провести пикировку, одновременно отбраковывая неполноценные сеянцы.

Чтобы рассада нормально развивалась, полив должен быть достаточно обильным, но при этом редким. Подкормку проводят после разворачивания второго полноценного листа, используя комплексные органоминеральные смеси или слабоконцентрированный раствор мочевины. В третьей декаде апреля растения можно пересаживать в открытый грунт (у каждого экземпляра должно быть не менее 4 полноценных листьев). На 1 м2 грунта должно оказаться 2—3 растения; загущенные посадки приведут к снижению урожайности.

Во время вегетативного периода цветная капуста нуждается в дополнительном поступлении в почву питательных веществ. В качестве подкормки используют калийные смеси, аммиачную селитру и суперфосфат. Целесообразно поливать растения указанными растворами каждые 2 недели, чередуя выбранные удобрения. Кроме того, грядки следует регулярно разрыхлять и увлажнять, одновременно удаляя сорные растения.

Для того чтобы сохранить привлекательную белую окраску цветочных головок, следует аккуратно притенять подрастающие растения, загораживая их от прямых солнечных лучей. Чрезмерная инсоляция вызывает позеленение соцветий.

Сбор урожая цветной капусты производят, учитывая степень зрелости головок и внимательно осматривая каждый экземпляр. Готовые соцветия аккуратно срезают острым инструментом вместе с несколькими листьями. Срок хранения данной культуры невелик — около 1 месяца. Свежие головки можно использовать для маринования и соления, подвергать термической обработке, отваривать и обжаривать.
