Данное растение в народе именуют поникающим или степным луком. В подземных частях побега и листьях очень много аскорбиновой кислоты и каротина, легкоусвояемых сахаров, минеральных соединений и эфирных масел. Повышенное содержание железистых солей делает данную культуру ценным диетическим продуктом.
Лук-слизун — это распространенный травянистый многолетник, относящийся к семейству луковых. Данное растение имеет характерную особенность: после срезания зеленой ботвы на поврежденных участках постепенно выступает сок густой, слизистой консистенции. В течение сезона вегетации листья остаются очень нежными, сочными и ароматными. По сравнению с другими разновидностями лука слизун почти не содержит едких веществ, придающих побегу острый вкус, поэтому луковицы и листья можно использовать для приготовления салатов и летних закусок.
В течение первого сезона вегетации степной лук образует зеленое перо, причем первые листья появляются над поверхностью почвы уже в начале апреля. В середине второго летнего сезона начинается цветение, а к сентябрю уже созревают семена.
Луковицы лука-слизуна очертаниями напоминают конус и располагаются попарно на длинном корневище, горизонтально расположенном под верхним слоем субстрата.
Толщина подземного побега может достигать 2—2,5 см. Стебель уплощенный, до полуметра в высоту, листья также плоские, с гладкой поверхностью, собранные у основания в пучки по 5—8 штук. Листья и стебли по запаху напоминают чеснок, но обладают менее выраженным вкусом.
Цветки лилово-розоватые, собранные в зонтик сферической формы. Если оставлять не убранный осенью лук на зимовку, с каждым новым сезоном вегетации он будет постепенно разрастаться по кругу или в виде неправильной спирали.
Лук-слизун обычно выращивают из рассады или высевают подготовленные семена непосредственно в субстрат. Посев производят поздней осенью или ранней весной, оставляя между рядами будущих растений промежутки не менее 60 см. Хорошо развитые растения на 3—4-й год жизни можно размножать делением многозубцовых луковиц, которые также высаживают в открытый грунт весной. Уход за данной культурой такой же, как и за обыкновенным репчатым луком.
Сбор первого раннего урожая можно провести в конце мая. Периодическую срезку пера выполняют по мере отрастания листьев. Лук-слизун можно употреблять в пищу свежим, а также подвергать термической обработке при приготовлении соусов, гарниров и пряных приправ.
