Деление корневищ производят ранней весной (эстрагон рано отрастает — как только стает снег и оттает верхний слой почвы). Междурядия — 60-70 см, расстояние в рядках — 30-40 см. После посадки нужен полив. Со второго года побеги срезают 4-6 раз за сезон.
Начинают это делать весной, когда они достигнут высоты 20-25 см. Молодые побеги добавляют в салаты, окрошку, супы, гарниры, соусы, соленья. Они служат прекрасным дополнением к бутербродам с маслом и сыром. Эстрагоном ароматизируют уксус и горчицу. Приятный аромат сохраняет и сушеная зелень. Эстрагон используют в колбасном и мясоконсервном производстве.
